PRODUCTION DETAILS
The grapes which were chosen to produce this wine were harvested and selected in manual harvesting from a mature vineyard in Judean Hill.
The production process was done in a private family run winery by the owners of the winery.
AGING
At the end of the alcoholic and Malo-Lactic fermentation process the wine rested in
new France oak barrels that have been suited to this type of grape for the duration
of 21 month in order to extract the aroma from the barrels. Afterwards the wine rested
for an additional period of few months in the cellars of the winery for another aging in
the bottles in order to balance the tastes of the wine. Extreme care has been taken to
guarantee the finest product that has special tastes and fragrances. A long resting period
of the wine on the grape peels in special fermentation vats and stirring the peels give the
wine a deep mauve color.
WINE DESCRIPTION
The first smell of the wine is a strong smell of red fruit, cherry and blackberries. After shaking the glass of the wine, the bouquet smells of the oak, coffee are integrated with a smell of gentle vanilla.
When you taste the wine, the wine is balanced with pleasant astringent. The aftertaste is long and complex.
This cabernet can be aged many years in good conditions.
We recommended opening this cabernet at least two hours before drink it and serving in 18? C/ 65?F.
